Ciabatta Be Kiddin’ Me Rib-Eye Sandwiches

INGREDIENTS:
2 lbs rib-eye steak, 1-1 ½” thick 1 tablespoon olive oil 1 tablespoon B&B Texas Style Steak Rub 2 tablespoons prepared horseradish ¼ cup mayonnaise ¼ cup sour cream ¼ cup Parmigiano-Reggiano, finely grated 4 Ciabatta rolls, sliced in half, lengthwise 2 cups fresh arugula ½ red onion, sliced thin
DIRECTIONS:
Wooohoo! It’s poker night and the women are out of the house! Time to break out the beer and the cigars, and time to fire up that grill! This celebration calls for some man’s man kinda grub. Pop the top off that beer, and let’s get this party started. First, season both sides of each rib-eye steak liberally with B&B Texas Style Steak Rub. Set those babies to the side. Next, in a small mixing bowl, whisk together (in the manliest way possible), horseradish, mayonnaise, sour cream, and grated Parmigiano-Reggiano. Cover and place in beer cooler. You know…that thing your wife calls the refrigerator. Light cigar. Light B&B Mesquite Lump Charcoal. Once glowing, (the charcoal, not the cigar), carefully add coals to the grill. Place seasoned rib-eye steaks on grill. Cook 5-7 minutes per side, depending on thickness and doneness preference. No sissies! We recommend medium-rare, but we’d let you get away with medium. When steaks have finished grilling, remove and let rest 7-10 minutes. Okay, stud, while the steaks are resting, brush the sliced Ciabatta rolls with olive oil, and place on the grill cut side down. Remove rolls once they are warm with a slight crunch to the cut side. Now that the steaks have had a chance to rest, grab your biggest, manliest steak knife, and cut them into thin slices on the bias (across the grain). Remove horseradish sauce from the refrigerator. Slather the top and bottom of each Ciabatta roll with the sauce. Lay thin slices of red onion on the bottom of each roll. Next, add a generous pile of sliced rib-eye steak. Add a handful of fresh arugula to the top of the steak, and close with the top of the roll. Stab a steak knife into the center of each sandwich for a manly presentation. Grab the beer, and serve to your best poker buddies. And, you might also want to wipe that drool from your chin before you serve those, big boy.
