B&B Mesquite Grilled Lobster Bites

INGREDIENTS:
1 lobster tail, (large enough to yield about 6 oz. of meat) 1-2 large cucumbers, peeled and sliced in 12 rounds ½ jalapeño (seeds or no seeds, your choice) zest of ½ lemon ¼ medium red onion, diced finely ¼ teaspoon fancy Dijon mustard 1/8 teaspoon avocado oil 1/8 teaspoon olive oil 1/8 teaspoon B&B Texas Style Seafood Seasoning B&B Mesquite Lump Charcoal
DIRECTIONS:
Cut lobster tail in half, lengthwise. Place on grill over glowing B&B Mesquite Lump Charcoal. Cook until shell turns red and remove from heat; set aside to cool. Peel 1-2 large cucumber(s) and slice into 12 rounds that are 1” in thickness. Using a melon baller, hollow out slightly, forming a small cup. Place cucumber ‘cups’ on that fancy serving plate your mother-in-law bought you, and set aside. Finely mince lobster tail and ½ medium jalapeño. In a bowl, combine mustard, red wine vinegar, avocado oil, olive oil and B&B Texas Style Seafood Seasoning. Gently fold in lobster and jalapeno. Spoon mixture into cucumber cups and sprinkle with B&B Texas Style Seafood Seasoning. Makes 12 pieces; serves 3 to 4 (if you can keep your hubby out of them!). Yeah, you’d better plan on doubling the recipe.
