Filet Mignon for Two with Roquefort Compound Butter

B&B Oak Lump Charcoal B&B Texas Style Steak Rub

INGREDIENTS:

2 teaspoons B&B Texas Style Steak Rub 2 teaspoons canola oil 2 beef filet mignon steaks, 1 ½” thick 2 slices thick cut bacon ½ stick unsalted butter, slightly softened 1 ounce Roquefort blue cheese

DIRECTIONS:

In a small mixing bowl, combine softened butter with Roquefort blue cheese using a fork. Add salt and pepper to taste. Cover the bowl, and refrigerate for 30 minutes. Brush each filet with canola oil, then season with B&B Texas Style Steak Rub on both sides. Wrap 1 slice of thick-cut bacon around the side of each steak, securing with a wooden toothpick. Set aside. Preheat B&B Oak Lump Charcoal. Once glowing, distribute evenly onto grate. Using tongs, place those beautiful filets on the grill and don’t move them. After 2 minutes, lift each steak, and rotate 90 degrees, grilling them for another 3 minutes. Flip each steak, only once, and allow them to grill for 2 minutes. Once again, lift each steak, and rotate 90 degrees, and grill for another 3 minutes. Remove steaks from the grill. Top each steak with the Roquefort compound butter, and allow them to rest 5 minutes. Plate the steaks, pour a nice, big glass of cabernet for your favorite lady, and let’s get it on!
