B&B BBQ Mushrooms with Blue Cheese & Shallots

INGREDIENTS:
1 lb fresh mushrooms, stems removed 8 ounces your favorite blue cheese 2 medium shallots, finely diced ¼ cup olive oil, to brush grill grate ¼ cup B&B Texas Style Hickory Smoke BBQ Sauce ¼ cup raw local honey Fresh thyme
DIRECTIONS:
Light B&B Oak Lump Charcoal. Once glowing, heat grill to medium (350° to 450°F). Poke 2 medium sized shallots onto a metal skewer. Brush the grill grate with olive oil, then, grill the shallots until slightly softened. Remove from grill and allow to them cool enough to handle, then dice. In a small bowl combine crumbled blue cheese and diced shallots. In a separate bowl, whisk together B&B Texas Style Hickory Smoke BBQ Sauce and raw, local honey. Set aside. Using a kitchen towel, clean any soil from the mushrooms and remove the stems with a small paring knife. Carefully fill each mushroom cap with the blue cheese and shallot mix. Brush the grill grates with olive oil once more. Place filled mushrooms onto the grill grate, cheese side up. Grill the stuffed mushrooms for 5-6 minutes, or until the cheese becomes all melty and yummy. emove from grill and place on a serving platter. Drizzle the BBQ sauce and honey glaze all over the mushrooms. Top with some tiny sprigs of fresh thyme, serve and enjoy.
