Grilled Figs with Danish Blue & Pistachios

INGREDIENTS:
8 fresh figs, stems removed 1/2 cup goat cheese, softened 4 ounces creamy Danish blue cheese, room temperature 8 grape leaves, drained and rinsed 1/4 cup honey ½ cup dry roasted pistachios, chopped 4 wooden skewers, pre-soaked in water for 1 hour Many, many glasses of wine
DIRECTIONS:
Uncork a bottle of Pinot Grigio. Pour glass of Pinot Grigio. Sip. Rough day? Hmmm, this may require a wine transfusion. Until then, light B&B Oak BBQ Grill Wood and let burn until glowing hot. While grill wood pre-heats, using a paring knife, cut a cross into the top of each fig leaving the bottom in tact. In a small bowl, mix together softened goat cheese and creamy Danish blue cheese using a fork. Add a dollop of cheese mixture into the center of each cross-cut fig. Wrap each fig with a grape leaf. Poking through the flesh of the fruit, push 2 wrapped figs onto each pre-soaked wooden skewer. Pour another glass of wine. Lightly oil the grill grate. Place fig skewers on hot grill. Cook for 4-5 minutes, turning once. Remove from heat, and remove from skewers. Drizzle with honey, and garnish with chopped, dry-roasted pistachios. Enough deliciousness for 3 best friends and you. Pssst…you’ll probably want to open that other bottle of wine now.
